Do Liver Sticks Taste Like Liver?
That’s the question. Not “are organs nutritious.” Everyone already knows liver is a multivitamin. The reason people put the stick back is they think it’s going to taste like the thing their grandmother boiled.
Short answer: it depends how much liver is actually in it, and what you put around it.
We put 25% whole beef liver and 5% whole beef heart in every BERSKI stick. We print those numbers because most “ancestral” sticks list liver somewhere in the ingredients and never say how much. A dusting and a quarter of the stick are not the same product. They’re also not the same flavor problem.
So yes. There is enough liver in ours that it could taste like liver. That’s the honest starting point.
What it actually tastes like
The flavor is beef. Salt. Then whatever spice we added.
Cajun is the one we tell nervous people to buy first. Real habanero and cayenne. Customers who came in expecting a liver puck have been pretty clear:

Salted is the opposite job. Four ingredients: beef, liver, heart, salt. Nightshade-free. Some people describe a gamey sweetness and come back for it. Some don’t. That’s not a defect. That’s 25% liver with nothing to hide behind.
Salt & Pepper sits in the middle. Same blend, organic cracked pepper.
If you’ve been burned by an organ snack before, don’t start on Salted to “get the full experience.” Start on Cajun. The full experience is still 25% liver. You just get to finish the stick.
Why other sticks taste like sour candy instead
A lot of meat sticks are built around encapsulated citric acid. It drops pH, it extends shelf life, and it gives that sharp tang people now think a stick is supposed to have. We wrote about why we left it out.
Without that tang, you taste the beef. With 25% liver, a little of the animal comes through on the simple flavors. Spice covers it. Acid would cover it too, and we’d rather not.
This is also why a 0.85 oz “ancestral” stick on a grocery shelf can taste like a normal snack stick. If the organ is a line on the label after water, there isn’t much to taste. There also isn’t much organ.
The Google problem
Search “beef liver sticks” and you’ll get dog treats. That’s not a joke. Human snacks barely show up.
We’re not making a pet product. Fully cooked, USDA inspected, 8g of protein in the 1 oz stick, 15g in the 1.9 oz. Kids eat them. We made them for our own. If you landed here from a pet-treat result: different aisle.
